ingredients
Plum Sour
- 60 ml gin or vodka
- 30 ml lemon juice
- 20 ml plum syrup
- 1 egg white, or 25 ml aquafaba
- Bitters
- Fresh plum slice, for garnishing
Method
Plum Sour
Step 1
Place all ingredients into a cocktail shaker and dry shake hard for 12 seconds.
Step 2
Fill shaker with ice and shake hard again for 12 seconds.
Step 3
Double strain into chilled coupette glass.
Step 4
Finish with bitters love hearts and a plum slice.

Plum Syrup
- 3 plums, diced
- 5 star anise
- 1 cup caster sugar
- 1 1/2 cups cold water
Plum Syrup
Step 1
Place all ingredients into a pan and bring to a high simmer, stirring every so often.
Step 2
Once high simmer is reached, let it simmer away for 8-10 minutes or until you have a close to syrup texture (it will thicken and keep cooking off the heat).
Step 3
Strain mixture through sieve and place in fridge for when needed.
Step 4
Remove star anise from strained plums and keep in sealed contained as a plum jam.
