- 3 tablespoons olive oil
- 6 large carrots, peeled and halved lengthwise
- 6 tablespoons salted butter
- 1 tablespoon ground coriander
- 1/3 cup honey
- 1 cup Greek yogurt
- 1/2 bunch fresh coriander leaves, finely chopped
- 20 mint leaves, finely chopped
- Sea salt, to taste
Method
Prepare the Herb Yogurt:
Step 1
In a mixing bowl, combine the Greek yogurt, finely chopped coriander leaves, mint leaves, and season with sea salt to taste. Mix well and set aside.
Char the Carrots:
Step 1
Heat a large, heavy pan over high heat. Add olive oil and let it heat up. Place the prepared carrots in the pan, allowing them to sizzle and char for about 20 minutes, turning occasionally to ensure all sides get charred evenly.
Step 2
After the initial 20 minutes, add the salted butter and ground coriander to the pan. Reduce the heat to medium and let the carrots continue cooking for an additional 10 minutes until they begin to soften.
Step 3
To the honey, add a dash of boiling water to loosen it. Pour this mixture over the carrots in the pan, gently turning the carrots to coat them with the honey-butter glaze. Allow the carrots to glaze for another 5 minutes over medium-low heat.
Step 4
Once the carrots are glazed and tender, remove the pan from the heat. Transfer the carrots to a serving dish. Spoon any remaining honey-butter glaze over the top. Finish by adding dollops of the prepared herb yogurt on top of the carrots.
