  • 1 pound spaghetti noodles
  • 1 2-3 pounds tri tip
  • 2 tablespoons yellow mustard
  • 2 tablespoons BBQ seasoning
  • 1 cup diced white onion
  • 1/4 cup olive oil
  • 5 cloves garlic, minced
  • 1 28 ounce can Muir Glen Organic Crushed Tomatoes with Basil
  • 2 teaspoons salt
  • 2 tablespoons brown sugar
  • 1 bay leaf
  • 1 6 oz can Muir Glen Organic Tomato Paste
  • 1 teaspoon black pepper
  • 1/2 cup chopped parsley
  • Fresh basil, for garnish

Method

  • Step 1

    Coat tri-tip with yellow mustard as a binder and season with BBQ seasoning. Insert a meat thermometer and smoke at 225°F until internal temperature reaches 135°F.

  • Step 2

    Heat olive oil in a large pan over medium heat. Sauté diced onion until translucent, about 5 minutes.

  • Step 3

    Add minced garlic and sauté for 1 more minute.

  • Step 4

    Stir in crushed tomatoes, salt, brown sugar, bay leaf, 14 ounces water, and tomato paste. Simmer partially covered over medium-low heat for 90 minutes, stirring every 10 minutes.

  • Step 5

    Once the tri-tip reaches 135°F, remove from smoker and sear over hot coals or in a cast-iron pan. Slice against the grain into thin strips.

  • Step 6

    Remove bay leaf from the sauce. Stir in parsley, black pepper, and adjust seasoning with additional salt and brown sugar, if needed.

  • Step 7

    Bring a large pot of salted water to a boil. Cook spaghetti noodles until al dente, according to package instructions. Drain.

  • Step 8

    Plate spaghetti noodles, top with pasta sauce, and garnish with basil. Add sliced smoked tri-tip on top.
