White Chocolate Birthday Cake Balls

ingredients

  • 1 cup pitted medjool dates
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup rolled oats
  • 1/3 cup macadamia nuts
  • 1/3 cup Justin’s maple cashew butter covered cashews or vegan white chocolate
  • 1 1/2 tablespoons organic sprinkles

Method

  • Step 1

    Use a food processor to blend the dates until it creates a paste-like texture. There should be no bits left.

  • Step 2

    Add in the vanilla extract, salt, and rolled oats.

  • Step 3

    Blend the ingredients until they fully combine to form large chunks on their own. If after waiting 5 minutes of processing and the ingredients don’t form a ball, add one date at a time until it does. Wait at least a minute in between adding dates to make sure you don’t add too many.

  • Step 4

    Add macadamia nuts, Justin’s maple cashew butter covered cashews or vegan white chocolate, and organic sprinkles to the food processor. Pulse until they are well-combined in the mixture, but make sure not to process it too much so that there are still yummy nutty chunks left.

  • Step 5

    Roll the mixture into balls and they’re ready to go! You can roll the balls as little or as big as you’d like. The serving size accounts for if the balls are rolled about 1 ½ inch in diameter.
