Comforting Vegan White ‘Chicken’ Chili

The flavors were unlike anything I’d tasted before and I couldn’t stop eating it along with its side of fluffy corn bread. I remember immediately going home and telling my mom she HAD to get the recipe. A common theme on here is nostalgic recipes I can’t eat anymore because they include meat or dairy.   • 2 cans young jackfruit
  • 1 cup warm water
  • 1 vegan chicken bouillon cube
  • 2 tablespoons olive oil
  • 1 chopped finely small yellow onion
  • 2 minced cloves garlic
  • 1 tablespoon nutritional yeast
  • 3/4 teaspoon cumin
  • 3/4 teaspoon paprika
  • 3/4 teaspoon dried oregano
  • dash of cayenne pepper or red pepper flakes
  • 1/2 teaspoon black pepper
  • 1 can light coconut milk
  • 2 cans diced green chiles
  • 2 cans drained and rinsed cannellini beans
  • 1 can drained and rinsed sweet corn
  • 1 teaspoon lime juice
  • 1/2 teaspoon salt

Method

Instructions

  • Step 1

    Prepare your jackfruit by removing the seeds and separating from the core. Mix together 1c of warm water and 1 full vegan chicken bouillon cube. Let marinate for at least 30 minutes. Prepare the rest of your ingredients while you wait.

  • Step 2

    Heat up the olive oil in a large saucepan. Add the onions and garlic and saute over medium heat. Once they’re slightly translucent, add in the spices (nutritional yeast, cumin, paprika, oregano, cayenne/red pepper flakes, and black pepper). Cook for a minute or two until browning begins and pot is fragrant.

  • Step 3

    Add in the jackfruit, along with the marinade, and cook uncovered until most of the liquid has evaporated. Pour in the coconut milk, green chiles, cannellini beans, and lime juice. Let simmer, covered for 10 minutes. Sprinkle in the salt at the end and adjust to taste.
