This French dessert is made with a few simple ingredients. A thick and creamy layer of custard is topped with a layer of caramelized sugar.

  • 5 eggs, yolks only
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • Pinch of salt
  • 400 ml heavy cream
  • 100 ml milk
  • 3 tablespoons sugar

Method

  • Step 1

    Heat the cream and milk in a saucepan (do not boil).

  • Step 2

    In a separate bowl, mix the egg yolks, sugar, vanilla and a pinch of salt with a whisk.

  • Step 3

    Add the heated milk and cream to the mixture little by little and mix.

  • Step 4

    Strain the mixture and divide into ovenproof bowls.

  • Step 5

    Place the bowls on the baking tray and fill the tray halfway with hot water.

  • Step 6

    Bake in a preheated 150 degree oven for 40-50 minutes.

  • Step 7

    After the sweets come out of the oven have cooled down at room temperature, let them rest in the fridge for at least 3 hours.

  • Step 8

    Sprinkle 1 teaspoon of granulated sugar on the rested desserts and burn with a blowtorch. After 4.5 minutes, the sugar will have hardened.

  • Step 9

    You can melt the sugar in the pan without a blowtorch and add it to the desserts in a thin layer.
