Recipe for Chicken Tandoori here.
Chop the leftover chicken tandoori into bit size pieces and set put in a bowl. Add yogurt and mix well.
In heavy bottom pot, heat oil and add bay left, onions and garlic. Saute till light golden brown about 8 mins.
Add cumin, coriander, cayenne, salt, turmeric and saute for about 3 mins, then add the canned tomatoes and mix well.
Cook this mixture on medium heat till the oil separates and its brown in color. It may stick to the bottom so use a wooden spoon to scrape it off. This take about 10 - 12 mins for this to be ready. It will look like a chunky brown paste.
Now turn the heat to low and add the yogurt and chicken to this, mix everything really well, cover and cook for 10 - 12 mins. Do not turn the heat up otherwise the yogurt will break. You want a low and slow bubble.
Take off cover and cook for 5 more mins on medium heat and reduce till the gravy is thick or to your desired consistency.
Serve with quinoa or steamed rice. and a wedge a of lime.
