For the Vegan "Fried Chicken"

  • 16 ounces (1 pound) prepared seitan chunks
  • 100 grams (½ cup + 2 tablespoons) Korean fry mix (gluten-free recipe below)
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • Chosen Foods 100% Pure Avocado Oil Spray, as needed

For the Wet Batter

  • 20 grams (2 tablespoons) cornstarch
  • 30 grams (3 tablespoons) Korean fry mix
  • 70 ml (4¾ tablespoons) water, adjusted as needed

For the Gochujang Aioli

  • 20 ml (1⅓ tablespoons) warm water
  • 30 grams (2 tablespoons) gochujamg
  • 60 grams (¼ cup) Chosen Foods 100% Original Vegan Mayo
  • 5 grams ( 1 teaspoon) garlic paste (or 4 minced garlic cloves)
  • Fresh chopped parsley, to taste

For the Korean Gluten-Free Fry Mix Substitute

  • 30 grams (2 tablespoons) cornstarch
  • 70 grams (½ cup + 1 tablespoon) potato starch
  • 3 grams (½ teaspoon) cayenne pepper
  • 6 grams (1 teaspoon) garlic powder
  • 6 grams (1 teaspoon) onion powder
  • 13 grams (1 tablespoon) monk fruit sweetener

Method

  • Step 1

    Preheat an air fryer to 390°. Combine ingredients for gluten-free Korean fry mix, if needed.

Make the Wet Batter:

  • Step 1

    Add the cornstarch, 30 grams of the Korean fry mix, and water to a medium bowl and whisk until smooth

Batter and Cook the Seitan:

  • Step 1

    Add dry Korean fry mix (or gluten-free Korean fry mix) to a separate bowl.

  • Step 2

    Coat the seitan chunks in the dry fry mix, knocking off the excess into the bowl. Submerge in the wet batter.

  • Step 3

    Place battered seitan in the air fryer and spray with Chosen Foods 100% Pure Avocado Oil. Cook for 15-20 minutes, flipping halfway through.

Make the Gochujang Aioli:

  • Step 1

    Meanwhile, add warm water and gochujang paste to a small bowl and stir until smooth.

  • Step 2

    Add Chosen Foods 100% Original Vegan Mayo and garlic paste or minced garlic and stir until combined.

  • Step 3

    Sprinkle parsley on top and enjoy with the vegan Korean air fried “chicken”.
