  • Kosher salt, to taste
  • 1/2 teaspoon chipotle in adobo sauce, adjusted to taste

  • 2 slices Italian bread
  • 3/4 cup cooked shredded chicken
  • 2 slices smoked gouda cheese
  • 2 tablespoons chopped fresh cilantro leaves
  • 2 tablespoons chopped Peppadew peppers
  • 1/2 small avocado, thinly sliced

Method

To make the Chipotle Sauce

  • Step 1

    In a small bowl, mix together Greek yogurt, salt, and chipotle in adobo sauce. Adjust seasonings to taste and set aside.

To make the Sandwich

  • Step 1

    On one slice of bread, spread a layer of the chipotle Greek yogurt sauce.

  • Step 2

    Add the shredded chicken, smoked gouda cheese slices, cilantro, Peppadew peppers, and sliced avocado. Top with the second slice of bread.

  • Step 3

    Heat a skillet or pan over medium heat. Lightly spray or grease the pan with cooking spray.
