- 5 tablespoons (75ml) olive oil, divided
- 1 large (300g) boneless, skinless chicken breast
- 2 garlic cloves, minced
- 1 tomato, sliced
- Pinch of kosher salt
- Fresh basil leaves
- 1 tablespoon olive oil
- 1/4 cup (28g) low-fat mozzarella cheese
- Balsamic glaze, for drizzling
- Toasted sourdough bread, for serving
Method
Step 1
Place the chicken breast in a bowl and add 2 tablespoons of olive oil with the garlic. Let the chicken marinate for at least 15 minutes.

Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the marinated chicken breast and cook until it's fully cooked through, about 6-8 minutes per side depending on the thickness. Season the chicken with a salt.
