  • 5 tablespoons (75ml) olive oil, divided
  • 1 large (300g) boneless, skinless chicken breast
  • 2 garlic cloves, minced
  • 1 tomato, sliced
  • Pinch of kosher salt
  • Fresh basil leaves
  • 1 tablespoon olive oil
  • 1/4 cup (28g) low-fat mozzarella cheese
  • Balsamic glaze, for drizzling
  • Toasted sourdough bread, for serving

Method

  • Step 1

    Place the chicken breast in a bowl and add 2 tablespoons of olive oil with the garlic. Let the chicken marinate for at least 15 minutes.

  • Step 2

    Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the marinated chicken breast and cook until it's fully cooked through, about 6-8 minutes per side depending on the thickness. Season the chicken with a salt.

  • Step 3

    Arrange the sliced tomatoes and fresh basil leaves on a serving platter.

  • Step 4

    Slice the cooked chicken breast and place it on top of the tomatoes and basil.

    Sprinkle the mozzarella cheese over the chicken and drizzle balsamic glaze on top for added flavor.
