  • 1 pound chicken cutlets
  • 1 cup Italian seasoned panko bread crumbs
  • 1/2 cup Parmesan cheese
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 egg, beaten
  • 8 slices Texas Toast garlic bread
  • 3/4 cup pasta sauce
  • 8 slices fresh mozzarella
  • Italian seasoning, balsamic sandwich dressing, and fresh basil (optional, for topping)

Method

  • Step 1

    In a shallow bowl, combine panko, Parmesan cheese, salt, and pepper. In a separate bowl, whisk the egg.

  • Step 2

    Dip each chicken cutlet into the egg, letting excess drip off, then coat evenly with the panko mixture.

  • Step 3

    Fry in oil at 350°F until golden brown and cooked through, bake at 400°F for 18–20 minutes, flipping halfway, or air fry at 375°F for 10–12 minutes, until crispy.

  • Step 4

    While chicken cooks, bake Texas toast at 400°F for 6 minutes, or until crispy.

  • Step 5

    Slice cooked chicken into bite-sized strips. Place inside each piece of Texas toast. Top with a spoonful of pasta sauce and one slice of mozzarella. Sprinkle with Italian seasoning.

  • Step 6

    Bake assembled sliders at 350°F for 5 minutes, or until cheese is melted and bubbly.

  • Step 7

    Garnish with fresh basil and drizzle with balsamic sandwich dressing if desired. Serve immediately.
