ingredients
- 4 chicken breasts
- 2 tablespoons olive oil
- 1/2 tablespoon onion powder
- 1/2 tablespoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/4 cup butter
- 1 large yellow onion
- 4 cups cremini mushrooms
- 8 sprigs of thyme
- 1 tablespoon crushed garlic
- 1 tablespoon Worcestershire sauce
- 1 tablespoon dijon mustard
- 3 tablespoons cornstarch
- 4 cups chicken stock
- 1 cup sour cream
- 1/4 cup chopped parsley
Method
Step 1
Slice chicken into bite sized pieces. In a small bowl toss the chicken with olive oil, onion powder, garlic powder, paprika, salt, and pepper.
Step 2
Sauté chicken until it’s no longer pink. Then remove it from the pan and set it aside.
Step 3
To the pan, add butter, onions, mushrooms, & thyme. Season with salt and pepper and sauté until deep golden brown. Add garlic, Worcestershire sauce and Dijon mustard. Sauté for a minute then add cornstarch and continue to sauté until it is fully incorporated. Slowly stream in the chicken stock. Be sure to stir to avoid clumping. Bring the sauce to a boil. Then reduce to a simmer and add the chicken and sour cream. Mix well, cover, and it let it simmer for 15 minutes. Stir in chopped parsley to brighten it up.
Step 4
Serve over rice of your choice.
