Spiced Carrot & Lentil pureed soup. It's the perfect winter warmer and vegan-friendly! Happy Friday everyone! serves 4 1 tbsp olive oil 3 carrots, sliced 2 onions, chopped 1 clove garlic, minced 1 tbsp minced ginger root 1 tsp ground cumin 3/4 cup (175 ml) red lentils 6 cups (1,5 L) vegetable stock salt and pepper to taste pinch of chilli powder Method: In a large saucepan, heat oil over medium heat, cook carrots, onions, garlic, ginger, cumin, chili, salt and pepper, stirring often until onions are softened, 3 minutes. Add stock and lentils, bring to boil. Reduce heat, cover and simmer until carrots and lentils are tender, 15 to 20 minutes. Blend the soup with a stick blender or in a food processor until smooth. Season to taste and garnish with roasted pumpkin seeds, pine nuts, sunflower seeds and currants. Enjoy!
