  • 3 tablespoons raw apple cider vinegar
  • 1 1/2 teaspoons honey
  • 1/2 teaspoon Dijon mustard
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 3 tablespoons olive oil

Salad:

  • 2 jammy eggs
  • Skin-on pasture-raised chicken thighs
  • Butter lettuce, torn
  • Radicchio, thinly sliced
  • Blue cheese, crumbled
  • 1 avocado, thinly sliced
  • 1 Red D’Anjou pear, thinly sliced
  • Pickled red onions, as needed
  • EPIC Uncured Bacon Bits

Method

  • Step 1

    Make the Vinaigrette: In a small mason jar, combine apple cider vinegar, honey, Dijon mustard, salt, and pepper.

  • Step 2

    While whisking, slowly drizzle in the olive oil until fully emulsified. Set aside.

  • Step 3

    Cook the Jammy Eggs: Bring a small pot of water to a boil. Carefully add the eggs and cook for 6 minutes and 30 seconds.

  • Step 4

    Immediately transfer the eggs to an ice bath to stop the cooking process. Peel and set aside.

  • Step 5

    Cook the Chicken Thighs: Preheat a cast iron skillet over medium heat. Season the chicken thighs with salt, pepper, and smoked paprika.

  • Step 6

    Sear the chicken skin-side down for about 5 minutes until crispy. Flip and cook for another 5-8 minutes until the internal temperature reaches 165°F.

    Let the chicken rest for 5 minutes, then slice into thin strips.

    Assemble the Salad: Combine torn butter lettuce and sliced radicchio in a salad bowl. Toss to mix.
