Looking for an easy #recipe to feed a group? This spinach #lasagna is easy to make, light to #eat ,totally yummy & it’s good for you! 🍅🍝******************************* Ingredients For the Quick Tomato Sauce⠀ 4 tablespoons olive oil⠀ 3 pounds ripe plum tomatoes (about 14), coarsely chopped⠀ 3 cloves garlic, smashed and thinly sliced lengthwise⠀ 2 small dried red pepper, seeds removed ⠀ 1 teaspoon salt or to taste⠀ 2 tablespoons freshly grated Parmesan cheese ⠀ ⠀ For the lasagna:⠀ 1 pound whole wheat lasagna⠀ 1 tablespoon olive oil⠀ 4 cloves garlic, smashed and thinly sliced⠀ 2 bunches #spinach⠀ Salt, to taste⠀ 2 cups #ricotta cheese⠀ ¼ cup #Parmesan cheese⠀ 1 cup shredded #mozzarella cheese, divided⠀ Black pepper, to taste⠀ ⠀ 1. Preheat the oven to 350 degrees. Make the Quick #Tomato Sauce.⠀ 2. Bring a pot of salted water to boil. Par-boil the lasagna according to package instructions. Drain and lay in a single layer on parchment paper or non-stick surface.⠀ 3. Heat a wide skillet over medium heat and cook the olive oil and garlic for 3 minutes. Turn the heat up to medium-high and add the spinach with a pinch of salt. Cook, stirring, until just wilted, about 1 to 2 minutes. Transfer to a colander and press the water out of the spinach.⠀ 4. In a medium bowl, mix the drained spinach, ricotta cheese, Parmesan cheese, half of the shredded mozzarella, black pepper, and a pinch of salt.⠀ 5. Lightly oil a 13 x 9-inch baking pan. Spread 2 heaping spoonfuls of tomato sauce on the bottom, then spread a single layer of the par-boiled noodles. Spread half the ricotta mixture on top, then cover with another layer of noodles. Spread ¾ of the remaining tomato sauce, then another layer of noodles. Pour on the remaining ricotta mixture and evenly distribute, then cover with the last of the lasagna #noodles Top with the remaining #tomatosauce and the reserved mozzarella cheese.⠀ 6. Cover with foil, and bake for 15 minutes. Uncover and bake for another 5 minutes until bubbling. Keeping those resolutions can be tough when you're craving something sweet, but we've created a list of Ann's favorite #fruit based #desserts like these #lavendar poached #apples with #tahinicream (recipe below) to keep you on track! ??Click the link in bio for more #dessertrecipes that are #healthydessert options. ⠀ **********************⠀ ⠀ LAVENDAR POACHED APPLES WITH TAHINI CREAM:⠀ ⠀ Ingredients⠀ 6 cups water⠀ 2 cups sugar⠀ ¾ cup lavender⠀ 2 teaspoons lemon juice⠀ 4 medium Golden Delicious apples, cores removed, peeled and quartered⠀ 1 cup Greek yogurt⠀ ¼ cup tahini⠀ 2 teaspoons honey⠀ ⠀ 1. In a medium sauce pot, combine water, sugar, lavender, and lemon juice. Bring to a boil, making sure all the sugar is dissolved. Once water comes to a boil, reduce heat to simmer and cook until reduced by about a third and you have a light lavender flavored syrup.⠀ ⠀ 2. Add apples to a clean pan in a single layer – a sauté pan is perfect. Pour the lavender syrup over the apples through a strainer. The apples should be barely covered with syrup. Bring the apples to a simmer and cover. Cook for 15-20 minutes or until fork tender. Once cooked, remove the apples from the liquid with a slotted spoon and cool slightly. Reserve the syrup.⠀ ⠀ 3. In a small bowl, mix together the Greek yogurt, tahini, and honey.⠀ ⠀ 4. This simple #ChiaSeed , Yogurt, #Raspberry Toast is delicious and a sweet, quick way to start your day from our friends @drexelfoodlab 🍞🎗Recipe below⠀ ********************⠀ CHIA SEED, YOGURT, RASPBERRY TOAST⠀ ⠀ Ingredients⠀ ⠀ 1 cup Greek yogurt⠀ 3 tablespoons and 1 teaspoon honey, divided⠀ 1 teaspoon vanilla extract⠀ 2 teaspoons chia seeds⠀ 4 slices of whole wheat bread⠀ ½ cup mashed raspberries⠀ ⠀ 1. In a medium size bowl, mix yogurt, 2 tablespoons honey, vanilla extract and chia seeds.⠀ ⠀ 2. Toast bread slices until golden brown.⠀ ⠀ 3. Divide the yogurt mixture evenly among the four slices of toast, spreading it evenly. Divide the mashed raspberries evenly among the four toasts, spreading on top. Recipe below⠀❤️🍫 ⠀ *******************************⠀ Ingredients⠀ ⠀ 2 cups whole wheat pastry flour (See Ann’s Tips)⠀ ½ cup Dutch processed unsweetened cocoa powder⠀ 2 tablespoons baking powder⠀ ½ teaspoon salt⠀ ¾ cup cane sugar⠀ 1½ teaspoons vanilla extract⠀ ½ cup melted coconut oil or grape seed oil⠀ ½ cup silken tofu⠀ 1 cup unsweetened soy milk⠀ 12 ounces frozen raspberries ⠀ ⠀ 1. Preheat the oven to 350 degrees. Grease an 8-inch cake pan and line the base with parchment paper.⠀ ⠀ 2. In a blender pulse together the oil, tofu, vanilla essence and ¼ cup of soy milk until well combined. Gradually blend in the rest of the milk, a ¼ cup at a time and blend. You will have a liquid the consistency of heavy cream.⠀ ⠀ 3. In a large bowl, whisk or sift together the whole wheat pastry flour, cocoa powder, baking powder, salt and sugar. Make a well in the center and using an electric mixer on medium, gradually add the tofu-soy milk mixture from the blender scraping down the sides of the blender with a spatula to get all the liquid into the flour mixture. Beat until the batter is smooth and thick. With the spatula, fold in the raspberries.⠀ ⠀ 4. Pour the batter into the prepared cake pan. Bake for 50 minutes, the cake will be extremely tender in the center, but well cooked on the edges.
