Prepare the Dough: In a large mixing bowl, combine the flour and cold butter. Use your hands to rub the mixture until it resembles coarse crumbs. Add the egg yolk, a pinch of salt, and cold water. Knead the dough until it comes together. Wrap the dough in cling film and refrigerate for 30-40 minutes.

Make the Berry Filling: In a small saucepan, combine the currants (or your chosen berries) with sugar. Bring to a gentle boil over medium heat. Dissolve the cornstarch in 3 tablespoons of water and add to the saucepan. Stir continuously for 1 minute, then remove from heat and let the mixture cool.

Assemble the Galette: Preheat your oven to 350ยฐF. Roll out the chilled dough into a circle, about 1 1/2 inches thick. Spread the cooled berry filling evenly over the dough, leaving a 1 1/2 inch border. Arrange the apple slices on top of the filling. Fold the edges of the dough over the filling to form a rustic galette. Sprinkle the top with sugar.
