ingredients

For the Dough

  • 7 tablespoons cold unsalted butter
  • 1 1/2 cups all-purpose flour
  • Pinch of salt
  • 1 egg yolk
  • 2 (to 3) tablespoons cold water

ingredients

For the Berry Filling

  • 1 3/4 cups currants (or any preferred berry)
  • 2 teaspoons cornstarch
  • 1/4 cup granulated sugar, adjusted according to the sweetness of your berries

ingredients

For the Topping

  • 3 medium apples, thinly sliced
  • 2 tablespoons granulated sugar, for sprinkling on top

Method

  • Step 1

Prepare the Dough: In a large mixing bowl, combine the flour and cold butter. Use your hands to rub the mixture until it resembles coarse crumbs. Add the egg yolk, a pinch of salt, and cold water. Knead the dough until it comes together. Wrap the dough in cling film and refrigerate for 30-40 minutes.

  • Step 2

Make the Berry Filling: In a small saucepan, combine the currants (or your chosen berries) with sugar. Bring to a gentle boil over medium heat. Dissolve the cornstarch in 3 tablespoons of water and add to the saucepan. Stir continuously for 1 minute, then remove from heat and let the mixture cool.

  • Step 3

Assemble the Galette: Preheat your oven to 350ยฐF. Roll out the chilled dough into a circle, about 1 1/2 inches thick. Spread the cooled berry filling evenly over the dough, leaving a 1 1/2 inch border. Arrange the apple slices on top of the filling. Fold the edges of the dough over the filling to form a rustic galette. Sprinkle the top with sugar.

  • Step 4

Bake: Transfer the galette to a parchment-lined baking sheet. Bake in the preheated oven for 35-40 minutes, or until the crust is golden brown and the apples are tender.

  • Step 5

Serve: Allow the galette to cool slightly before serving. Itโ€™s delicious warm, especially with a scoop of vanilla ice cream on the side.
