ingredients
For the pie dough
- 1 stick (113 grams) cold unsalted butter
- 2 cups (240 grams) all-purpose flour
- 1 large egg
- Pinch of salt
- 2 tablespoons sour cream
- 1/4 cup (30 grams) powdered sugar
- 1/2 teaspoon baking powder

For the filling
- 1 pound apricots, halved
- 1/2 (80-100 grams) cup granulated sugar, adjusted depending on the sweetness of the apricots
- 1 tablespoon cornstarch
Method
To make the dough
Step 1
Dice the cold butter into small cubes and add to the flour (which has been pre-mixed with salt, powdered sugar, and baking powder). Rub the mixture between your fingers until it resembles fine crumbs.
Step 2
Add the egg and sour cream, and quickly knead the dough until it's smooth and elastic.
Step 3
Wrap the dough in plastic wrap and refrigerate for 30-40 minutes, preferably overnight.
To make the apricot filling
Step 1
Place the apricot halves in a saucepan, add the sugar, and cook over low heat for about 5 minutes, until they release some juice.
Step 2
Dissolve the cornstarch in about 3 tablespoons of water, add it to the apricots, bring to a boil for 3-5 minutes, then remove from heat. Be careful not to overcook the apricots; they should remain intact.
Step 3
Allow the apricots to cool completely before assembling.
Assemble the pie
Step 1
Divide the dough into two parts, one slightly larger than the other.
Step 2
Roll out the larger portion of dough and line your baking pan with it.
Step 3
Roll out the smaller portion and cut it into about 1/2 inch wide strips.
Step 4
Pour the apricot filling onto the dough in the pan. Arrange the dough strips in a lattice pattern over the filling. If desired, you can braid the strips for a decorative touch.
Step 5
Sprinkle the top with sugar.
Bake
Step 1
Preheat the oven to 350ยฐF.
Step 2
Bake the pie for 40-45 minutes. After about 25 minutes, check the pie and cover it with foil to prevent over-browning.
Step 3
Allow the pie to cool slightly before serving.
