ingredients

  • 1/2 cup gluten-free oat flour (or rolled oats if using a blender)
  • 2 tablespoons plant-based vanilla protein powder (or use more oat flour)
  • 1 teaspoon baking powder
  • Pinch of salt
  • 1 teaspoon sweetener of choice (optional), plus more for topping
  • 1/4 cup dairy-free yogurt
  • 1/2 cup plant-based milk
  • Vanilla extract (optional)
  • Handful of fresh blueberries
  • 1 tablespoon 70% chocolate, melted for drizzling
  • Flaky sea salt, for topping

Method

  • Step 1

    Preheat the oven to 350°F or an air fryer.

  • Step 2

    In a bowl (or blender), combine all the ingredients and mix well.

  • Step 3

    Add some fresh blueberries to the dough and use a spatula to spread them evenly. Place the remaining blueberries on top of the mixture.

  • Step 4

    If using an air fryer, bake at 350°F for about 15-18 minutes (adjust based on the desired texture). If using an oven, bake for 20-24 minutes.

  • Step 5

    Top with melted chocolate and a sprinkle of flaky salt, optionally with some more sweetener.
