These brownies are high in protein, gluten-free, and require no baking. They are an ideal pre- or post-workout snack.

ingredients

  • 1 1/2 cups gluten free/paleo brownie mix
  • 1/2 cup chocolate protein powder
  • 1 cup creamy almond butter
  • 2 tablespoons maple syrup or powdered monk fruit
  • 2 tablespoons melted coconut oil
  • 1 cup chocolate chips
  • Sea salt flakes

Method

  • Step 1

    Add the brownie mix, protein powder, almond butter, coconut oil, and 2/3 chocolate chips to a bowl and mix together until a brownie batter texture forms.

  • Step 2

    Press brownie mixture into an 8x8 baking dish lined with parchment paper or a silicone one.

  • Step 3

    Place brownie mixture in the freezer for 1 hour.

  • Step 4

    Take the dish out of the freezer and carefully cut the brownie into 16 pieces.

  • Step 5

    Melt the remaining 1/3 cup chocolate chips with a little coconut oil. Drizzle the chocolate over the brownies and sprinkle some sea salt. Store in the fridge and enjoy throughout the week!
