Easy vegan chickpea curry

ingredients
- 1 can chickpeas
- 1 can coconut milk
- 1 medium diced yellow onion
- 2 medi peeled and cubed carrots
- 4 stalks chopped asparagus
- 1 inch minced fresh ginger
- 2 cloves minced garlic
- 4 tablesp red curry paste
- 1 tablesp coconut or avocado oil
- 4 cups cooked white rice
- 4 tablesp minced cilantro
- 1 minced jalapeño
Method
Step 1
Heat oil in a medium sized pan. Add onion and sauté for 3-4 minutes, until translucent. Add carrots and sauté for another 4 minutes. Add bell pepper and sauté for 1 minute.
Step 2
Add garlic, ginger, and asparagus. Sauté until all vegetables are slightly softened, about 2 minutes.
Step 3
Add coconut milk and stir until combined. Let simmer for 5 minutes, until vegetables are softened and curry is thickened. Add chickpeas and cook for another 4 minutes.
Step 4
Serve over rice and enjoy!
