ingredients

  • 1 can chickpeas
  • 1 can coconut milk
  • 1 medium diced yellow onion
  • 2 medi peeled and cubed carrots
  • 4 stalks chopped asparagus
  • 1 inch minced fresh ginger
  • 2 cloves minced garlic
  • 4 tablesp red curry paste
  • 1 tablesp coconut or avocado oil
  • 4 cups cooked white rice
  • 4 tablesp minced cilantro
  • 1 minced jalapeño

Method

  • Step 1

    Heat oil in a medium sized pan. Add onion and sauté for 3-4 minutes, until translucent. Add carrots and sauté for another 4 minutes. Add bell pepper and sauté for 1 minute.

  • Step 2

    Add garlic, ginger, and asparagus. Sauté until all vegetables are slightly softened, about 2 minutes.

  • Step 3

    Add coconut milk and stir until combined. Let simmer for 5 minutes, until vegetables are softened and curry is thickened. Add chickpeas and cook for another 4 minutes.

  • Step 4

    Serve over rice and enjoy!
