September 2014. I was on a coach going from Smoking Goat to SomSaa. Talking to a few others, general chit chat on the way. Somehow we got on the topic of British food. Without hesitation I said I wasn't the biggest fan. Didn't find it that interesting or flavoursome. It was at this point that someone pointed out that a senior chef from HDR was nearby. To say I felt bad would be an understatement. I went over to say hello. That was the first time I met Calum. Whether he heard what I said or not. He was then + has every time since been an absolute gentleman. Since then I have wanted to proper meal here. But never taken the opportunity. Finally a chance arrived. For lunch. Ordered a decent variety of starters, mains and dessert. Without hesitation I can say everything ordered was superb. Full of bold flavours. The Pineapple + Mango Ravioli (w/ Alphonso mango #AsianNation) a refreshing end. Suffice to say I was wrong before. The British food here is both refined and full of flavour. Equally the service was exceptional. Thanks @chefcalum + @holborndiningroom. #NeverForgot

Lamb Belly Skewers I took a first bite + thought perhaps it needed more salt. But then the natural flavour. The quality of the lamb came through. I ate the whole plate by myself. Just superb. It took a while but I made it down @leocarreiraa. #BackSoon
