Watermelon Salad

  • 6 cups (1-inch thick) cubed watermelon
  • 1/2 cup crumbled feta cheese
  • 1 tablespoon chiffonade fresh mint
  • Amagansett Flaky Sea Salt, for topping

Method

  • Step 1

    Add tahini, date syrup, champagne vinegar, mustard, and salt to a large bowl. Whisk to combine. Add water ¼ cup at a time, whisking to combine. If consistency is still too thick, add 1 tablespoon additional water at a time. Place aside.

  • Step 2

    Place watermelon in a large, wide-based bowl. Drizzle with Tahini Date Dressing. Sprinkle with feta and mint. Season with flaky salt to taste. Serve chilled. Refrigerate leftover dressing in an airtight container or jar for up to two weeks.
