Mustard Slathered Sheet Pan Salmon

ingredients
- 1 1/2 pounds boneless salmon filet
- 2 tablespoons extra virgin olive oil
- Kosher salt, to taste
- Ground black pepper, to taste
- 1 cup whole grain Dijon mustard
- 2 tablespoons Everything But the Bagel Seasoning
- 5 sprigs fresh dill
Method
Step 1
Preheat the oven to 325° or set the grill to low-medium heat. Place aluminum foil on a sheet pan. Spray with cooking spray and place the salmon on it.
Step 2
Drizzle the olive oil over the fillet. Add salt and pepper to taste (keep in mind the mustard will have salt as well)
Step 3
Slather the mustard liberally over the entire fillet. There should be a thick coating of mustard. Be sure to coat the sides, too!
Step 4
Sprinkle the Everything but the Bagel seasoning on top. Surround the salmon with the dill sprigs, and use the foil to form a loose “hug” around the filet.
Step 5
In the oven or on the grill: bake for 17-20 minutes (17 = medium-rare / 20 = medium)
Step 6
Remove from the oven or grill and sprinkle with more fresh dill or some chopped parsley if desired.
