ingredients
- 1 teaspoon Lavender Syrup, plus more for a sweeter latte (method below)
- 8 ounces milk of choice
- 2 ounces (about a double shot) espresso or bold coffee
- 1 Compartes Lavender Chocolate Bar, section (long enough to place across your mug)

Lavender Syrup
- 1/4 cup Heilala Pure Vanilla Sugar, or turbinado sugar
- 1/2 teaspoon Heilala Vanilla Extract
- 1/2 teaspoon dried lavender buds
Method
Lavender Syrup
Step 1
Add ¼ cup water, ¼ cup sugar, vanilla extract, and lavender to a small skillet.
Step 2
Bring to a boil, then immediately reduce heat to low and simmer until the sugar has dissolved, about 5 minutes, stirring periodically.
Step 3
Once dissolved, remove from heat and allow the syrup to sit for 20 minutes. Strain to remove lavender buds. Transfer syrup to a mason jar or airtight container. You can make this ahead of time. Chill until ready to use and store in the refrigerator.
Lavender Latte
Step 1
In a small pot, combine milk and lavender syrup. Whisk over medium heat until foamy and steaming, not boiling. If you have a milk frother, blend the milk for 30 seconds to create more froth and foam.
Step 2
Place Compartes Lavender Chocolate Bar across top of mug. Slowly pour espresso or coffee over chocolate so it melts and breaks into mug. Stir gently to combine without losing top foam.
Step 3
Place a spoon at the lip of the milk to hold foam back. Pour milk into mug and then remove spoon to top with foam.
Step 4
Top with shaved or roughly chopped Compartes Lavender Chocolate Bar and cocoa powder if desired. Serve hot.
