ingredients

  • 2 sweet potatoes
  • 1 cup green beans
  • carrot
  • 1 cup chopped celery
  • 1 red bell pepper
  • 1/2 green bell pepper
  • 1/4 chopped parsley
  • 2 cups swiss chard
  • 1 cup kale
  • 1/2 cup corn
  • 1 teasopon salt
  • 1/2 teasopon black pepper
  • 1/2 teasopon garlic powder
  • 1/2 teasopon onion powder
  • 1/2 teasopon oregano

Method

  • Step 1

    Bake sweet potatoes at 175°C for about 60 mins.

  • Step 2

    Meanwhile, cook green beans and chop all the veggies. Pour a splash of water into a pan and cook veggies until soft. Then add swiss chard, kale, parsley, and simmer. Lastly add corn, cooked green beans, and seasonings.

  • Step 3

    Serve with a fresh green salad and top baked sweet potatoes with veggie mixture. Sprinkle with black sesame seeds and fresh chopped basil. Enjoy!
