Cubed sweet potatoes are tossed in coconut sugar and cinnamon and are then air fried until golden brown. Sweet coconut butter is melted and drizzled all over. This treat is perfect for a quick and easy vegan dessert!

ingredients
- 2 large sweet potatoes
- 1 tablespoon olive oil, melted
- 1 1/2 teaspoon cinnamon
- 2 tablespoons coconut sugar
- 1/4 coconut butter, melted
Method
Step 1
Wash and cube the sweet potatoes. Add to a bowl and mix with olive oil, cinnamon, and coconut sugar.
Step 2
Preheat air fryer to 400F. Grease your air fryer if needed. Add to the basket and air fryer for about 12-14 minutes- shake them up halfway through.At the end of them cooking, warm up your coconut butter with a tiny splash of milk in the microwave. Start with 20 seconds and repeat until melted! Drizzle on top
