  • 2 tablespoons olive oil
  • 3 pounds yellow onions, thinly sliced
  • 1/4 teaspoon kosher salt
  • 3 garlic cloves, minced
  • 1 tablespoon minced fresh thyme
  • 2 tablespoons all-purpose flour
  • 4 cups water, plus more if needed
  • 4 tablespoons Better Than Bouillon Sautéed Onion Base
  • 1/4 teaspoon freshly ground black pepper
  • 8 ounces farfalle pasta (or other short-cut pasta)
  • 1/2 cup full-fat canned coconut milk
  • 1/4 cup shredded vegan Parmesan, plus more for serving
  • 1 tablespoon red wine vinegar (or sherry vinegar)
  • Breadcrumbs, for serving
  • Fresh chopped parsley, for serving

Method

  • Step 1

    Heat the vegan butter and olive oil in a large, deep pan or pot over medium-high heat.

  • Step 2

    Add the sliced onions and salt, stirring to coat. Cover the pot and cook for about 10 minutes, or until the onions start to sizzle.

  • Step 3

    Remove the lid and reduce the heat to medium-low to medium. Cook the onions for 45 to 90 minutes, stirring occasionally, until they are deeply caramelized. Adjust the heat as needed to maintain a low sizzle and scrape any onions from the bottom to prevent burning.

  • Step 4

    Stir in the minced garlic and fresh thyme, cooking on medium-low for 2-3 minutes until fragrant.

  • Step 5

    Sprinkle the flour over the onions and stir well, cooking for 1 minute to thicken the sauce.

  • Step 6

    Pour in 4 cups of water and bring to a boil over medium-high heat.

  • Step 7

    Stir in the Better Than Bouillon Sautéed Onion Base, freshly ground black pepper, and farfalle pasta. Ensure the pasta is just below the surface of the water. Add extra water if necessary to fully cover the pasta.

  • Step 8

    Boil the pasta for 15 minutes, stirring frequently, until the pasta is al dente and the liquid has reduced and thickened.

  • Step 9

    Turn off the heat and stir in the coconut milk, shredded vegan Parmesan, and red wine vinegar.

  • Step 10

    Serve the pasta warm, topped with extra vegan Parmesan, breadcrumbs, and fresh parsley for garnish.
