ingredients

  • 3 persian cucumbers, sliced
  • 1/4 watermelon, chopped into 1 inch cubes
  • 1 cup edamame
  • 1 cup arugula, chopped
  • 6 ounces feta cheese, crumbled
  • Fresh thyme, optional, for garnish
  • Olive oil, for drizzling
  • Balsamic vinegar, optional, for drizzling
  • Flakey salt, for sprinkling

Method

  • Step 1

    Add the sliced cucumber, cubed watermelon, edamame and chopped arugula to a large bowl. Top with crumbled feta.

  • Step 2

    Drizzle with olive oil & balsamic vinegar. Top with flakey salt and serve.
