ingredients
- 2 tablespoons ghee
- 1 medium onion, finely chopped
- 1 pound baby spinach
- 1/2 cup labneh
- 1/4 cup Tomato Achaar, plus more for serving
- 1/4 cup freshly grated Parmesan cheese
- Salt and pepper, to taste
Method
Step 1
Sauté onions in ghee over a medium heat until golden.
Step 2
Add spinach to pan and cook until wilted, about 3-5 minutes. Season with salt and pepper.
Step 3
Mix in labneh until creamy. Turn off heat and stir in tomato achaar and parmesan.
Step 4
Season with salt and more tomato achaar if you like. Serve warm!
