They say a watched kettle never boils, but please, please don't tell me a watched jar never pickles because I could stare at these beauties all day! Swiss chard stems leftover from last night's dinner are getting #spicy pickled today. These beauties are high in micronutrients (vitamins and minerals), phytochemicals (health ambassadors), and antioxidants (crime fighters against free radicals) so please ? don't throw them away. Pickle them!

3.22.17 Happy Waffle Wednesday! These protein packed, whole grain beauties are just the thing you need to get you through the week! I topped mine with @fourthandheart vanilla ghee (pretty sure I'm addicted)🤤, raw chopped almonds, cinnamon, pure maple syrup, & sweet raspberries.😋 ° ° Ingredients you probably already have🙌 WAFFLES: ▫️2 c cottage cheese▫️2 c old fashioned rolled oats ▫️6 large eggs▫️1 TBsp vanilla (umm... I like vanilla🙋‍♀️) ▫️pinch of salt (optional) ▫️Heavy dashes of cinnamon aka I didn't measure 😉 Heat waffle iron to med-high heat. Place all ingredients in a blender & mix🔄until smooth. Pour in waffle iron (optional: drop in a handful of frozen blueberries at this time) & cook until golden brown. The NUTRITION EXPERTS who make it their mission to educate others on how food affects our bodies & ultimately their quality of life... Here's to helping others live longer, HEALTHIER, happier lives! 🙌 ° And I don't know about you, but what better way to celebrate🎉 than with a healthy recipe & a little dark chocolate😉 ° Heart Healthy Protein Pancakes: 2 ripe bananas 4 pasture-raised eggs 1/2 cup old-fashioned oats (ground finely in food processor or ninja) 2 scoops @drinkorgain plant based vanilla protein powder 1 tsp vanilla Pinch of salt (optional) Cinnamon as desired (optional) Directions: Place bananas in bowl & mash with fork until pudding consistency. Add rest of ingredients until well combined. I use a 1/4 measuring cup & pour batter onto griddle @325°F sprayed with @chosenfoods coconut oil. Cook pancakes until brown & golden. Extra add-in suggestions: @enjoylife dairy free dark chocolate chips, frozen blueberries, or chopped nuts (add these while first side cooks). I topped mine with melty peanut butter (peanut butter warmed with coconut oil). Each 2 pancake serving provides 13 gms protein & 4 gms fiber. 3.1.17 Happy March 1st oooorrr should I say Happy #NationalPeanutButterLoversDay 🥜💕 which confuses me a bit because isn't that EVERYDAY or is that just me? 🤔🤣🤷‍♀️ Thought I'd celebrate🎉this day with everyone by sharing these simple & delicious 6 ingredient #peanutbuttercookies ° ° Ingredients: 1 cup natural peanut butter 1 pasture-raised egg 1/3 cup honey 1 tsp vanilla 1/8 cup coconut flour* 1/8 tsp salt Directions: Preheat oven to 350°F. Mix all ingredients together (I just used a medium sized bowl & fork). Line baking sheet with parchment paper & drop balls of dough using TBsp & flatten with fork. Bake for 8-10 minutes! That's it! *No coconut flour? No problem... Just omit that ingredient & cook for 7-8 min. 😉 Serve with a glass of your favorite milk. I used my homemade toasted coconut almond milk... Let me know if you'd be interested in that recipe.... Wayyyyy better than store-bought... 2.27.17 When you've got a seven mile run on the agenda tomorrow, several half empty food jars/containers, & leftover cooked pasta from a few days ago... You come up with this scrumptious carb concoction as a solution to your problems.🤷‍♀️😋😎 ° Preheat🔥oven to 350°F. In large skillet, brown ~1 cup @gardein beefless ground crumbles (or your choice protein) over med heat. Once browned, turn the heat down to low & add the following: half a jar (about 1.5 c) tomato basil marinara, 2 heaping TBsp (kitchen, not measuring) of @kitehillfoods almond cream cheese, 1/8 cup almond milk🥛, small handful parmesan cheese, garlic powder, Italian🇮🇹seasoning, salt & pepper. Cook & stir mixture until everything is nice & melty😰. Then gently mix in ~ 2 cups cooked whole wheat penne pasta & 1 whole chopped zucchini. Add to 2 qt casserole dish... Lightly top with more parmesan cheese🧀 & cover with aluminum foil. Bake for ~18 min⏰, uncover & then broil for ~2 min. Serve with large green salad🥗.
