ingredients
- 300 grams fresh pasta
- 500 grams chanterelles
- 4 cloves garlic
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon sugar
- fresh thyme
- 80 grams butter
- 2 tablespoons flour
- 250 milliliters milk
- 250 milliliters pasta water
- 1/2 teaspoon salt
- 50 grams grated Parmigiano
Method
Step 1
Add washed whole chanterelles on a sheet pan and grate the garlic on top, sprinkle with salt, sugar, and drizzle with oil
Step 2
Bake at 200 C for 20 minutes with the ventilator on for extra crispy mushrooms
Step 3
Cook the pasta according to package instructions if using dried, for 3-5 minutes if using fresh pasta
Step 4
Drain the pasta and reserve the pasta water
Step 5
To make the Alfredo sauce, in a pan melt the butter and start whisking
Step 6
Add in the flour, brown for 30 seconds
Step 7
Add the milk, water, and salt
Step 8
Continue whisking for 1 more minute before removing from heat
Step 9
Add the grated cheese and pasta and toss together
Step 10
Top with the mushrooms and enjoy
