Squash blossom pasta with pesto

ingredients

  • 250 grams orzo
  • 1/2 thinly sliced zucchini
  • 2 corn cobs
  • 1 sweet onion
  • 100 grams pesto
  • 50 grams extra virgin olive oil
  • a handful of squash blossoms
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 150 milliliters pasta water
  • 1 tablespoon lemon juice
  • lemon zest, for serving
  • parmegiano, for serving

Method

  • Step 1

    Cook the orzo according to package instructions

  • Step 2

    Drain, but save the pasta water, and mix the orzo with the pesto

  • Step 3

    Cut the corn off the cob, slice the zucchini and onion

  • Step 4

    Add some olive oil to a pan and heat

  • Step 5

    Lightly fry the zucchini blossoms from each side, about 30 seconds, remove

  • Step 6

    Melt the butter in the same skillet

  • Step 7

    Add the onion and cook for 1 minute

  • Step 8

    Add in the zucchini and the corn, and cook for 5 minutes while stirring occasionally

  • Step 9

    Add the pasta water and cook for 2 more minutes

  • Step 10

    Toss everything together and serve with fresh Parmigiano and basil
