ingredients

  • 250 grams pasta
  • 500 grams cubed salmon fillet
  • 1 thinly sliced zucchini
  • 3 cloves of crushed garlic
  • 50 grams butter
  • zest, from 1 lemon
  • 250 milliliters white wine
  • 150 milliliters pasta water
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon sugar
  • fresh dill

Method

  • Step 1

    In a hot skillet with some olive oil cook the zucchini for 4 minutes

  • Step 2

    Add the butter, garlic, spices, and lemon zest, cook for 2 more minutes on medium

  • Step 3

    Add in the wine and cook for 5 minutes until the wine reduces in half

  • Step 4

    Add the pasta and toss, remove from the heat

  • Step 5

    Add the pasta water and the salmon and toss

  • Step 6

    Put on a lid and let sit for 5 minutes before serving, this will cook the salmon trough

  • Step 7

    Serve with chopped fresh dill
