Pasta

  • 1/2 pound mafaldine pasta
  • handful of torn bread pieces
  • 4 cloves of smashed garlic
  • 1/3 teaspoon chili flakes
  • 1/2 teaspoon salt

Whipped ricotta

  • 250 grams ricotta
  • 50 milliliters olive oil
  • 1 teaspoon fresh lemon zest

Roasted broccolini

  • 250 grams broccolini
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 lemon slices

Method

  • Step 1

    Preheat oven to 325°F.

  • Step 2

    Toss the bread with garlic, spices, and olive oil on a baking sheet. Bake until golden brown, about 10 minutes. Set aside to cool.

  • Step 3

    Season the broccolini with salt, pepper, olive oil, and lemon slices. Arrange on a baking sheet and roast for 15-20 minutes.

  • Step 4

    Cook your pasta according to package instructions and drain.

  • Step 5

    Pulse croutons in a food processor to make breadcrumbs to desired coarseness.

  • Step 6

    Wipe out the food processor, then add the ricotta, lemon zest, and olive oil. Blitz until smooth.

  • Step 7

    Serve the pasta in bowls with the whipped ricotta, add the roasted broccolini and top with breadcrumbs.
