Pulled pork

  • 1 pound pork shoulder
  • 5 fluid ounces tomato sauce
  • 2 tablespoons chipotle paste
  • 1 lime, juiced
  • 1 tablespoon sugar
  • 2 teaspoons kosher salt
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • 2 bay leaves
  • 1 quart hot water

For the sandwich sauce

  • 1 teaspoon chipotle paste
  • 2 tablespoons pickle relish
  • 2 tablespoons mayonnaise

For the Grilled Cheese

  • 16 slices sandwich bread
  • 4 cups cheddar, shredded
  • 4 cups mozzarella, shredded
  • 1 stick softened butter

Method

  • Step 1

    Prepare the pork shoulder. Heat some oil in a roasting pot or dutch oven. Sear the pork on all sides until golden brown, about 7 minutes.

  • Step 2

    Add the hot water, bay leaves, spices, and tomato sauce. Cook, covered, medium low for about 2 hours.

  • Step 3

    Remove pork shoulder from the pot and shred using two forks.

  • Step 4

    Make the sauce. Combine the chipotle paste, mayo and the pickle relish. Set aside.

  • Step 5

    Make the grilled cheese. Butter both sides of each slice of bread. Top one slice of bread with cheese, sauce, shredded pork, more sauce, more cheese, and the top slice of bread.

  • Step 6

    Heat a skillet with some oil on medium-low and grill the sandwiches on each side until golden brown and the cheese is melted.
