ingredients

Potato and shrimp salad

  • 1 kilogram fingerling potatoes
  • 300 grams shrimp
  • 100 grams butter
  • 4 cloves of garlic
  • fresh parsley
  • 1 teaspoons salt
  • 1 teaspoon black pepper
  • 5 soft boiled eggs
  • Fresh arugula
  • 10 halved cherry tomatoes

Green Goddess sauce

  • bunch of spinach
  • 4 green onions
  • 1 whole avocado
  • bunch of fresh basil
  • bunch of mint leaves
  • Jucie of 1/2 lemon
  • 200 milliliters extra virgin olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cloves of garlic

Method

  • Step 1

    Boil the potatoes for 10 minutes and drain

  • Step 2

    Preheat the oven to 200°C

  • Step 3

    Make garlic butter by mixing butter, grated garlic, salt and pepper, and chopped parsley

  • Step 4

    Cut the potatoes in half and toss with the shrimp and the garlic butter, place on a sheet pan

  • Step 5

    Roast for 10 minutes

  • Step 6

    Prepare your soft boiled eggs

  • Step 7

    In a food processor make the green goddess sauce by blitzing all the ingredients together

  • Step 8

    On a plate place some arugula, then the potatoes, shrimp, tomatoes, and eggs

  • Step 9

    Pour over the sauce and serve with some lemon wedges
