ingredients

  • 250 grams Orzo pasta
  • 1 fresh mozzarellas
  • 400 grams cherry tomatoes
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1 teaspoon sugar
  • sprinkle of chili flakes
  • 1 tablespoon extra virgin olive oil
  • 3 tablespoon pesto
  • 2 tablespoons balsamico
  • Fresh herbs, for serving
  • Fresh strawberries, for serving

Method

  • Step 1

    Cook the orzo for 8 minutes, drain and rinse with cold water to stop the cooking

  • Step 2

    Toss with olive oil once cooled

  • Step 3

    Heat a skillet with some olive oil and throw on the tomatoes

  • Step 4

    Let them blister all up, cooking for about 1-2 minutes, remove the skillet from heat and let them cool a bit

  • Step 5

    Toss with the spices and let come to room temperature

  • Step 6

    Choose a large serving plate and smear it with the pesto

  • Step 7

    Throw the orzo on the pesto

  • Step 8

    Top with torn pieces of mozzarella, add the tomatoes

  • Step 9

    Serve with fresh strawberries and fresh herbs

  • Step 10

    To finish, drizzle with balsamico
