Lilac ice cream

ingredients

  • bunch of lilac flowers
  • 500 millileters heavy cream
  • 500 grams sweetened condensed milk
  • Juice of 1 lemon
  • Zest of 1 lemon
  • Pinch of salt

Method

  • Step 1

    Place a loaf pan in the freezer for at least 30 minutes

  • Step 2

    Wash the lilac flowers in cold water

  • Step 3

    To infuse the cream with lilacs heat the cream and let cool a little bit before pouring over the lilacs

  • Step 4

    Let cool completely and refrigerate until super cold

  • Step 5

    Strain out the flowers and whip the cream with a pinch of salt

  • Step 6

    In a separate bowl mix the sweetened condensed milk with lemon zest and lemon juice until smooth

  • Step 7

    Add in some extra lilac flowers and stir in the cream

  • Step 8

    Pour the mixture into the cold loaf pan and cover with plastic wrap and place in the freezer

  • Step 9

    Ideally, freeze overnight or at least 8 hours

  • Step 10

    Thaw for 5-7 minutes before serving
