ingredients
- 450 grams all purpose flour
- 380 grams warm water
- 2 teaspoons yeast
- 2 tablespoons extra virgin olive oil
- 1 teaspoon salt
Method
Step 1
Mix the dough with a wooden spoon for a few minutes until it looks somewhat uniform
Step 2
Cover the bowl with plastic wrap and place in the fridge for 12-18 hours
Step 3
Halfway through do the coil fold and place it back in the fridge
Step 4
Remove from the fridge and let it come to room temperature before starting to shape
Step 5
Divide the dough into 3 equal parts, can’t stress this enough, but do use a kitchen scale for this
Step 6
Shape them like shown in the video or just fold over, pinch closed, fold over again, pinch closed and roll to elongate
Step 7
Place the baguettes on the pan you have prepared and let rise for about 40 minutes
Step 8
You can score them if you have a super sharp knife or razor or just leave them as is
Step 9
Preheat your oven to 220°C; Boil a kettle of water
Step 10
Place the baguette pan in the middle and an oven dish or pan filled with hot water at the bottom
Step 11
Cook for 15 minutes
Step 12
Remove the water pan and cook for 15 more minutes
Step 13
Let cool completely before serving
