"RECIPE:
Slice 1 medium eggplant into rings 1/4 inch thick. Brush on both sides with 3 tablespoons olive oil mixed with salt to taste, 1/4 teaspoon cumin powder and 1/2 teaspoon paprika. Brush a grill pan with olive oil and grill eggplant slices on medium high for about 7 minutes on one side and 5 minutes on the other until soft. Sprinkle with 1-2 tablespoons goat cheese, pine nuts (optional) and a basil leaf (which I knew toddler would reject but oh well a mommy's gotta try ) and roll up and fix with a tooth-pick. Also fabulous as an adult cocktail snack "
