Spring vegetable Gazpacho with pesto accompanied with a colourful assortment of crostinis: Arugulas with Parmigiano olive oil and balsamic reduction, duck rillettes with prosciutto, roasted eggplants (aubergines) with herbs, strawberries with arugula and Greek cheese, Catalan style Tomatoe toast with Serrano ham, Salami Milanese. York ham with honey mustard and butter, and avocado spread with radishes and Bleu d'Auvergne cheese. Prepare all your toppings before and when you have all of them ready Toast the bread on a pan with a bit of butter and olive oil until they are golden brown and crispy. Hope you enjoy them!
