ingredients
For the tofu
- 1 block extra firm tofu
- 2 tablespoons coconut aminos
- 1 tablespoon mild white miso
- 1 teaspoon sesame oil
- Rice Paper rolls
- Butter lettuce
- Sushi rice or vermicelli noodles (optional)
- Cooked tofu
- Sliced thinly cucumber 🥒
- Shredded carrots
- Shredded purple cabbage
- Sliced red pepper
- Sliced mango
- Avocado slices
- Cilantro or Mint
- Chopped peanuts
- Sesame seeds

Peanut Ginger Dipping Sauce
- 1/3 cup all natural peanut butter
- 3 tablespoons coconut aminos
- 1 teaspoon sesame oil
- 3 teaspoons maple syrup
- 2 teaspoons sriracha
- 1 teaspoon freshly grated ginger or 1/2 tsp ground
- 1 garlic clove minced
- 1 lime juiced
- 1/4 cup coconut milk or water
Method
Step 1
Press the tofu with something heavy then drain water & cut tofu into 1 inch strips. Mix the marinade in a long container until smooth then add tofu. Let sit for 5-10 min then warm up a pan on medium heat.
Step 2
Place the tofu strips in the pan & cook on all sides until browned & crispy. Take off pan-set aside & whisk all of your PB ginger dipping sauce ingredients in a bowl ( you may need to add extra coconut milk if too thick)
To assemble
Step 1
Make sure you have all the summer roll ingredients in front of you-dip one of the rice paper wrap in warm water for a couple of seconds-let the water drip off then place on a damp cutting board. Work quickly here when placing the veggies-butter lettuce, cooked tofu, cucumber, carrot, cabbage, red pepper, mango, avocado, cilantro or mint, peanuts. Wrap the sides tightly then gently roll up & sprinkle sesame seeds on top. Dip in the peanut sauce & enjoy!
