Now you absolutely NEED to experience these BUFFALO SMASHED PIZZA POTATOES-I had to stop myself from eating the whole tray 🙊😅 That crisp from the potatoes combined with some spice & cheese is just so comforting to me🥰 Have as an appetizer or pair with a meal!

ingredients

  • 1 1/2 pounds baby gold potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon Trader Joe’s pizza seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • Pepper, to taste
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup buffalo sauce
  • Minced parsley
  • Minced celery

Method

  • Step 1

    Boil water in a large pot with a pinch of salt, when it comes to a boil add your washed potatoes & cook for 20 min.

  • Step 2

    Drain potatoes & let them rest for 5 min then add them to a bowl with olive oil & seasonings. Mix together & put them on a lined sheet pan.

  • Step 3

    With a knife make a cross-cross cut on each potato. Using a square piece of parchment paper & a glass smash the potatoes all the way down. Some may break apart but that’s ok!

  • Step 4

    Put in the oven & roast for 30-35 min.

  • Step 5

    Once potatoes are out of the oven put on the shredded cheese & a drizzle of buffalo sauce-repeat for all the potatoes.

  • Step 6

    Add back into oven for 7-10 minutes or until the potatoes edges are brown & the cheese has melted.

  • Step 7

    Sprinkle parsley, celery & enjoy!
