Baked Eggs On Miso And Seaweed Toast
Tried something new over the weekend: baked eggs on miso and seaweed toast, otherwise known as umami toast! Make a miso butter from soft butter, miso paste, garlic, then spread on bread slices. Layer with seaweed (or other veg you deem fit, or even bacon, which i enthusiastically added) in a greased baking pan. Crack eggs inside, sprinkle pepper, then bake at gas mark 4 (lower heat so the egg gets cooked and toast crisps but doesn't burn) until egg whites set. Hearty, crisp and delicious toast slices if you ever tire of sandwiches!
