One of my favorite things about salad is how creative you get. This recipe comes from my love of adding watermelon to my summer salads because it adds a fresh burst of flavor. If you're looking to add protein, it goes great with grilled halloumi, shrimp, or chicken.

ingredients
- 1/2 red onion, thinly sliced
- 2 tablespoons red wine vinegar
- 1 teaspoon kosher salt
- 6 ounces mixed greens
- 1 cup chopped watermelon
- 1 large English cucumber, sliced into ¼ inch pieces
- 6 radishes, sliced in half lengthwise
- 1 serving Leftover Jam Vinaigrette
Method
Step 1
Place the sliced red onions into a small bowl and toss together with vinegar and salt. Allow the onions to marinate for 10 minutes.
Step 2
Place the greens onto a large platter and top with the marinated onions and remaining ingredients. Once the salad is assembled, serve immediately.
