ingredients
- 1 rack approximately 3 pounds country style pork ribs
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoons cayenne pepper
- 1 teaspoon smoked paprika
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 2 large apples, chopped
- 2 sprigs of rosemary, chopped
- 4 sprigs of thyme, chopped
- 4 cloves of garlic, finely chopped
- 1 large shallot, thinly sliced
- 1 teaspoon ground ginger
- 1 tablespoon grainy mustard
- 1 1/2 cups full-bodied red wine
- 1/4 cup brown sugar
- 1 3-inch cinnamon stick, or ½ teaspoon ground cinnamon
Method
Step 1
Arrange a rack in the middle of the oven and heat the oven to 350 degrees.
Step 2
Toss together the ribs with salt, cayenne pepper, and smoked paprika in a large bowl.
Step 3
Place a large skillet over medium heat and add in olive oil.
Step 4
Place the ribs into the pan and sear on each side for 3 to 4 minutes or until each side is golden brown. Once seared, remove from the pan and set aside.
Step 5
Add in 2 tablespoons of butter and use a wooden spoon to scrape the browned bits from the bottom of the pan.
Step 6
Add in apples, herbs, garlic, shallot, ground ginger, and mustard. Cook together for 5 to 7 minutes, or until the apples are tender and slightly jammy.
Step 7
Pour in the red wine and bring to a simmer.
Step 8
Cook down the red wine for 8 to 10 minutes, then add the ribs back in.
Step 9
Cover the pan with a lid and place in the oven, baking for 45 minutes, or until the ribs are tender.
Step 10
Serve with mashed potatoes and roasted vegetables.
