- 2 1/2 cups frozen peas
- Zest of 1 lemon
- Dried chili flakes, to taste plus more for topping
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- A handful of dill, roughly chopped plus more for topping
- A handful of mint, roughly chopped plus more for topping
- 1 tub (250 grams) Brancourt's Dairy Cottage Cheese
- 4 thick slices of sourdough bread
- 2 tablespoons olive oil
- 1 tablespoon white vinegar
- 4 free-range eggs
- Extra virgin olive oil, for topping
- Lemon wedges, for serving
Method
Step 1
Bring a large pot of lightly salted water to a boil and prepare a bowl of ice water.
Step 2
Add the peas to the boiling water and cook for 40 seconds, then drain and transfer them immediately into the ice water. Stir them in the ice water for 1 minute, then drain thoroughly.
Step 3
Place the peas into a food processor along with the lemon zest, chili flakes, dill, mint, and salt and pepper to taste. Blend for 30 seconds to lightly crush the peas, then spoon them into a bowl and fold through 1 cup of cottage cheese. Adjust the seasoning and set aside.
Step 4
Bring a medium pot of water to a boil, add a good pinch of salt, and stir in the vinegar. Turn the heat down to a heavy simmer. Crack each egg into a small individual bowl or cup. Stir the water to create a whirlpool and add two of the eggs into the water, letting the whirlpool spin the whites around the eggs, preventing them from sticking together.
Step 5
Simmer for 2-3 minutes, then carefully remove the eggs with a slotted spoon and place them on a paper towel-lined plate. Repeat with the other two eggs.
Step 6
Meanwhile, drizzle the bread with the olive oil and grill or toast it in a pan or toaster.
