  • 6 ounces (160 grams) spaghetti
  • 2 tablespoons (30 grams) extra virgin olive oil
  • 3 1/2 tablespoons (50 grams) unsalted butter
  • 4 garlic cloves, minced
  • 1 celery stalk, finely chopped
  • 10 1/2 ounces (300 grams) fresh clams
  • 2/3 cup (150 grams) white wine or reserved pasta water
  • 1 teaspoon red pepper flakes, adjusted to taste
  • Kosher salt, to taste

Method

  • Step 1

    Boil the spaghetti in salted water until al dente, according to package instructions. Reserve some pasta water if not using wine.

  • Step 2

    While the pasta cooks, heat olive oil and butter in a large skillet over medium heat. Add minced garlic and celery and sauté until fragrant.

  • Step 3

    Stir in the clams and cook until they just begin to open, about 3-4 minutes.

  • Step 4

    Add white wine (or reserved pasta water) and red pepper flakes to the skillet. Let it simmer for 2-3 minutes, allowing the sauce to slightly reduce.

  • Step 5

    Drain the spaghetti and add it to the skillet with the clams and sauce. Toss well to coat the pasta with the sauce.
