- 6 ounces (160 grams) spaghetti
- 2 tablespoons (30 grams) extra virgin olive oil
- 3 1/2 tablespoons (50 grams) unsalted butter
- 4 garlic cloves, minced
- 1 celery stalk, finely chopped
- 10 1/2 ounces (300 grams) fresh clams
- 2/3 cup (150 grams) white wine or reserved pasta water
- 1 teaspoon red pepper flakes, adjusted to taste
- Kosher salt, to taste
Method
Step 1
Boil the spaghetti in salted water until al dente, according to package instructions. Reserve some pasta water if not using wine.
Step 2
While the pasta cooks, heat olive oil and butter in a large skillet over medium heat. Add minced garlic and celery and sauté until fragrant.

Stir in the clams and cook until they just begin to open, about 3-4 minutes.

Add white wine (or reserved pasta water) and red pepper flakes to the skillet. Let it simmer for 2-3 minutes, allowing the sauce to slightly reduce.
