  • 250 grams macaroni
  • Water, for boiling

For the Vegan "Cheese" Sauce

  • 350 grams silken tofu
  • 3 heaping tablespoons nutritional yeast
  • 1 teaspoon dijon mustard
  • 200-400 ml soy milk
  • Salt, to taste
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder, or 1 clove of garlic minced
  • 2 tablespoons flour

Method

  • Step 1

    Boil the macaroni according to packet instructions. Meanwhile, add the silken tofu, nutritional yeast, mustard, salt and half of the milk in a blender. Blend for 20-30 seconds until smooth.

  • Step 2

    Heat oil in a pan over a medium heat. After a minute, add the blended tofu along with the flour, garlic granules and remaining milk. Whisk continuously until the texture thickens and resembles a béchamel.

  • Step 3

    Add the cooked pasta and mix until well combined.
