Recipe Card

ingredients

  • Water, for boiling
  • 500 grams macaroni
  • 150 grams mature cheddar cheese, grated
  • 150 grams Red Leicester cheese, grated
  • Knob of butter
  • 50 grams plain flour
  • 400 ml milk
  • 1 heaping teaspoon dried sage
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cinnamon
  • 200 grams pumpkin purée
  • Salt, to taste

Method

  • Step 1

    Boil the pasta in salty water for 5-6 minutes. Drain and set aside.

  • Step 2

    To a hot pan, add butter and leave to melt. Then add the flour and pour the milk. Whisk continuously over a low heat until a bechamel sauce forms.

  • Step 3

    Add the seasonings, two thirds of the grated cheeses and pumpkin purée to the pan. Place back on the heat and mix until melted.

  • Step 4

    Add the pasta to the cheese sauce and mix until well combined. In an oven safe dish, add the Mac n cheese, top with the rest of the grated cheese and bake at 160 degrees Celsius fan for 15 minutes.
